Recipes - Sept
Savory Roast Beef

1 teaspoon minced garlic
1 cup burgundy
= teaspoon fresh thyme
2 leaves freshly chopped basil
3 tablespoons
Basil's Fire & Brimstone (MILD)
1 tablespoon Worcestershire sauce
3 dashes of sesame oil
Salt to taste
1 (4-pound) standing rib roast
cup - = cup water
1 tablespoon butter or margarine


• Combine garlic, burgundy, thyme, basil, hot sauce,
Worcestershire sauce, sesame oil and salt in a deep casserole
• Add roast & turn a few times so that mixture's well saturated.
• Cover with tinfoil and refrigerate at least two hours; if
possible do this the night before.
• Remove roast from mixture and place in a roasting dish.
• Pour remaining mixture from casserole dish over roast, add
water and butter and place in a 3750F oven.
Bake for 2 hours for well done roast.
• Remove foil and let brown for 30 minutes more. Remove from
oven and let stand for 10 minutes before carving.

Note: this roast is wonderful done on a gas Bar-B-Q
